We had friends coming for a Barbe lunch in our place, so my stomach felt still pretty full when the dinner time came.
It’s always a dilemma for our weekend meal arrangement. Getting up too late in the morning, breakfast has to be postponed to 2 hours later. By the time we finish the breakie, it’s already getting close to noon time. Then we muddle around till about 2pm to have our lunch….yes, you can imagine the rest of the day….when dinner time comes, we just don’t feel hungry.
Unfortunately my family simply doesn’t have the tradition to skip any meal, so dinner is a MUST. Trust me, it’s one of the hardest things to cook your meal when you are not hungry and don’t have appetite at all. I would have avoided it if I ever had any other choices
I hate it so much.
So, I stood there in the kitchen, full of “hatred” in my heart, thinking “maybe I can cook something simple yet creative, nutritious and tasty enough to open up the whole family’s appetite, as well as cheer myself up”.
I started to pull things out from my kitchen drawers. I boiled the water, threw in rice, seaweed strips, grated carrot, green peas, finely chopped bacon, dried mushroom, bok chou, sliced button mushroom and some medlar….Then I waited, let the heat working its way out.
About one hour later, when I got back to kitchen to check what’s in the pot, I realised that this was just what I wanted to have for the dinner—-congee with a mix of all sort of random ingredients. The smell was very impressive because of seaweed, and the taste was even greater, which was proved by us eating up the whole pot.

You congee looks delicious. What’s on top of it? Is it garlic?
My family traditional no fuss meal is to mix all the leftover with rice, and just let it boil, not too long. Woo… yum!
