This is one of my favourite cold dishes for hot summer days. These little red raddish are so cute. Some of them has round shape just like a ball, some of them looks a bit longer. The green stems and leaves attached to them are supposed to be discarded.  If the red skin looks a bit of dirty or blackish, just peel it off slightly, leaving the inside snow white .

I always prefer not to peel the whole skin off as I love the red + white colour combination so much. It actually creates the best looking dish, especially when you cut them to strips.

That’s how I do it, simple and effective. Cut them to thin strips, add in salt, sugar, vinegar and a few drops of sesame oil. Cool it in the fridge before serve. It tastes juicy and so refreshing for a summer hot day.

I carved a little mushroom out of one of the round raddish today, just to add a bit of more fun :-)
