My husband loves it. He asked me to bring several slices as his day time snacks, just in case he gets hungry in the office.
Ingredient:
250g packet plain biscuit
150g butter or margarine
Half can of condensed milk
3/4 cup of brown sugar
150g dried apricots
Flaky coconut for topping
Method:
Crush biscuit and chop apricot, mix them together;
Melt butter, condensed milk and sugar in a medium heated sauce pan, keep stirring until boiling;
Turn off the heat, add biscuit and apricot mixture into sauce, mix well;
Line a lamington tin with foil and press mixture into tin.;
Sprinkle coconut over the top. Place in fridge until set;
Cut to the desired size to serve.
Note: I used castar sugar instead of brown sugar. I guess it will give the different colour to the final apperance of slice. My husband also suggests to reduce sugar and add more apricots to avoid intaking too much sugar but enjoying more his favourite taste from apricots.
